served in Giannis Pita Bread
Hot or cold bahn-mi or Thai pork salad is a delicious filling for Giannis Pita Breads or Wraps.
- 4 – 6 Giannis Pita Bread warmed according to pack directions
For the salad
- ½ cucumber cut into ribbons
- ¼ cup spring onion sliced
- ¼ cup grated carrot
- 2 tbsp Mirin
- 1 tsp sugar
- 2 tbsp soy sauce
- Finely shredded mint leaves
- Additional butter crunch lettuce leaves
For the meat
- 500g pork mince
- 2 tbsp soy sauce
- 1 tsp mirin
- ½ tbsp grated ginger
- 1 tbsp sweet chilli sauce
- 1 clove garlic crushed
- 1 tsp fish sauce
Serves four
Combine all the salad ingredients except for the lettuce, and toss lightly then let aside.
In a separate bowl combine the pork mince and seasonings. Heat a frying pan and fry the seasoned pork crumbling with a masher or fork until cooked.
Warm the pita bread according to the pack directions. Cut the pita bread in half to make 2 pockets, gently line the pockets with butter crunch lettuce then add some of the cucumber salad and top with pork mixture. Garnish with mint leaves.
